  • 50 gms Butter
  • 2 Medium Onions
  • 4 Large Tomatoes
  • ½ cup Peas
  • ½ cup Cauliflower
  • ½ Cup Carrot
  • ½ Capsicum
  • 2 Medium Potatoes
  • 1 tsp Red chili powder
  • ¼ tsp Turmeric powder
  • 1 tbsp Pav bhaji masala
  • ½ tsp Garam masala powder
  • 1 tsp Kasuri methi
  • 1 tsp Ginger-Garlic paste
  • 2 tbsp Fresh coriander Leaves


  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • ½ tsp Fenugreek seeds
  • ½ tsp Carom Seeds
  • ½ tsp Amchur Powder
  • ½ tsp Black Salt


  • Firstly in a pressure all the add all the vegetables 1/2 cup peas,1/2 cauliflower,1/2 cup carrot along with basic spices ⅙tsp turmeric powder, ⅙tsp red chili powder and salt cook till 2 whistle .
  • Meanwhile heat 2-3 tbsp butter with some oil to prevent burning of butter then add 1 tsp ginger-garlic paste be cautious at this time because it splutter too much saute till the raw smell goes
  • Add 2 medium sized finely chopped onions saute till they became pink then add 4 large tomatoes cook till the tomatoes became mushy add 1 tsp red chilli powder,1 tsp coriander powder, and ½tsp turmeric powder saute for a couple of minute
  • At this stage when the pressure is completely released add 2 boiled potatoes in the boiled vegetables mixture by using a potato masher mash them nicely to get that creamy texture .
  • At this stage keep adding water in the onion tomato mixture and give them a nice stir keep stiring until oil separates from the pan now add all the mashed vegetables .
  • Meanwhile heat a pan then add 1 tsp cumin seeds,½ tsp carom seeds ,¼tsp fenugreek seeds and 1 tsp fennel seeds dry roast them for a couple of minutes .and when they completely cools down blend them in a fine powder along with amchur powder and black salt
  • Add the roasted masala powder in the vegetable mix and a pinch of salt saute for another 5 minutes
  • Heat a pan add 1 cube of butter then toast the dinner rolls /pav then serve with warm bhaji

Pav  Bhaji is one of the lipsmacking buttery street food from India famous India. in which buns are served with spicy mashed vegetable curry .The story behind the origin of pav bhaji is that the dish was invented to fulfill the requirement of lunch for a textile mill workers so that they need cheap ,easy and quick to prepare ,light but nutritious food .so, they mixed all  the vegetables available at the place and added some spices and hence our famous pav bhaji is prepared. so basically take all the vegetables and extract all of its flavor and nourishment that is then brought together and then served with bun. A special masala is used to make the curry which can be easily available in any supermarket /Indian store but here i am sharing the homemade masala .for the curry/bhaji boil caulifllower, potatoes, carrot, peas ,capsicum and beans in a pressure cooker .meanwhile heat butter in a pan my vegan friends can replace butter with any cooking oil  saute 2 medium sized onions finely chopped ,4 large tomatoes and 1 tbsp ginger-garlic paste saute till the tomatoes get mushy after 2 whistle switch off the flame when pressure is completely released add all the boiled vegetables in the saute onions, tomatoes paste give it a nice stir this is a dish which if cooked patiently on mild flame with loads of butter tastes much batter you can’t imagine pav bhaji without butter at last add the pav bhaji masala and then again saute for a couple of minutes meanwhile heat a tawa add a dallop of butter a toast the buns/dinner rolls  that’s it your pav bhaji is ready serve warm .
